Mole
Mole meaning 'sauce' is a marinade used in traditional Mexican cuisine containing fruits, nuts, chili peppers, and spices. The most popular version is mole poblano - a rusty red sauce typically served over turkey or chicken.

Tamales
Tamales originate in the Mayan and Inca tribes as easily portable food for their armies. Pockets of corn dough are stuffed with either a sweet or savoury filling, wrapped in banana leaves or corn husks, then steamed before unwrapping and enjoying.

Chilaquiles
Chilaquiles is a popular breakfast dish made from lightly fried tortillas topped with salsa. Scrambled or fried eggs and pulled chicken are usually added on top, as well as cheese and cream.
